Pepper and bacon pasta bake

  • 2 onion

  • 1 handful cheddar grated (optional)

  • 2 tins tomato

  • 2 red pepper (or orange)

  • 500g pasta

  • 1 handful basil (or parsley)

  • 2 carrot

  • 600g creme fraiche half-fat

  • 4 slices back bacon trimmed


  1. Chop onions and peppers, grate carrots.
  2. Fry until soft.
  3. Add tinned tomatoes, seasoning and herbs.
  4. Cook for 10 minutes, then stir through crème fraiche.
  5. Blitz with a hand blender until smooth.
  6. Cook pasta and bacon.
  7. Chop bacon.
  8. Stir bacon and 1/3-1/2 of the sauce through the pasta, spread cheese over the top, place in the oven in an oven-proof dish on 190C for 10 minutes until sauce is bubbling and cheese is melted (if used).
  9. Freeze the remaining sauce for an easy dinner.

Handy Hint

Ideal meal for fussy children who won't eat vegetables. You can add a little sugar if you like.
Also nice if you substitute the bacon for chicken or roasted veg.

    Lovely sauce, kids eat it happily, I sometimes add a couple of carrots.

    This is our weekly regular. Kids love it, it's easy & you can make loads to freeze in batches.
