Curried beef and courgettes

  • 1 medium onion chopped

  • 2 tbsp tomato puree

  • 2 tsp curry powder (to taste)

  • 3 courgette chopped into chunks

  • 3 slices bacon trimmed of fat

  • 1 stick celery chopped

  • 500g beef mince (extra-lean)

  • 3 cloves garlic crushed

  • 5 mushrooms chopped


  1. Pan fry the onion and celery and mushrooms until softened.
  2. Add the mince and bacon, followed by the mushrooms and the garlic.
  3. Once the mince and bacon are cooked add courgettes, allow to cook for a further 5 minutes until starting to go soft.
  4. Season to taste.
  5. Stir in the tomato puree and the curry powder.
  6. Serve with boiled rice.

Handy Hint

So long as extra lean mince is used and the fat is trimmed off the bacon, this recipe is free on Slimming World.

If it seems very liquidy at any stage (I find the mushrooms give off a lot of liquid) then just drain before continuing to cook.

Can be made vegetarian using Quorn mince and bacon-style rashers.

    We all eat this in our house, including the 3yo and the 18mo. I use mild curry powder if it's for the children. It keeps in the fridge for a few days after and can be reheated in the microwave, DH usually takes some to work the next day and it's nice in pitta bread with salad as well as with rice.
