Dairy-free egg-free birthday cake

  • 300g self-raising flour

  • 300/10oz icing sugar

  • 1 tsp vanilla extract

  • 175g caster sugar

  • 1 tsp baking powder gluten-free

  • 3 tbsp golden syrup

  • 3 tbsp cocoa powder

  • 25g cocoa powder

  • 1 300ml/half pint soya milk

  • 150g margarine

  • 150g dairy-free margarine (such as Pure)


  1. Heat oven to 180C, Gas 4.
  2. Line two cake tins with grease proof paper at the bottom and grease sides.
  3. Mix the flour, baking powder, cocoa and sugar.
  4. Rub in the marge.
  5. Add the milk and syrup.
  6. Beat well to make a smooth batter.
    Pour the mixture into the tins and bake for 25 mins (times are for a fan assisted oven)
  7. For the icing, mix the margarine, icing sugar, cocoa powder and vanilla extract to make a spreadable icing that should be sufficient to fill and cover the top of the cake. Use a few drops of the soya milk if it's too dry.

    I am confused as to why there are two measures of cocoa powder-I presume one for the cake and one for the icing but which is the one for the cake. Also it states margarine but surely that is not dairy free and I presume that is intended for the cake as the icing has dairy free margarine. Can somebody please clarify. Thank you.

    This is a great cake. Even though my boy has now grown out of his allergies, he still prefers this cake to 'proper' cakes. Everyone who tried it requests it. I use normal milk, and half oil and half marge to make it moist. Even without cocoa it was nice (though not *as* nice)- I think the trick is to not use too much vanilla perhaps?

    I made a vanilla version of this and it was not at all nice :-( Could be that it's ok with the cocoa? The texture was good but even with loads of vanilla essence the flavour was not at all good, not sweet enough and with a slightly weird aftertaste.

    Thank you for this...just had a trial run for my daughter's 1st birthday cake and its turned out pretty good. So hard finding good recipes / ideas when multiple allergies!! :)

    I hope this helps, as it is really hard to find a good cake that is allergen free.
