  • 1 tbsp tomato puree

  • 2 tbsp olive oil

  • 1 pinch salt

  • 0.25 tins chopped tomato

  • 0.5 tbsp cumin

  • 2 tsp tandoori powder

  • 500g salmon fillets cut lengthways (skinless and boneless, or use any white fish)

  • 0.5 tbsp coriander

  • 2 spring onions chopped

  • 0.5 tsp black pepper coarse ground


  1. Sprinkle all the spices over the fish and leave for 30 minutes.
  2. Heat the oil in a large frying pan.
  3. Add the tomatoes and tomato puree to the oil.
  4. Shallow fry the fish in this oil and tomato base. Cook each side of the fish for 3-4 minutes then sprinkle with chopped spring onions and fresh lemon juice when done

Handy Hint

You can use oily fish like salmon, or white fish like coley, cod or haddock.

    This recipe is really simple and quick and can be made from start to finish in 30 minutes. If you kids don't like spices, you can omit them and add later for the adults. Tastes good with rice or nan More similar healthy quick recipes can be found at:
