  • 1 pinch cinnamon (or nutmeg)

  • 4 slices bread buttered on both sides (slightly stale is good)

  • 3 tbsp demerara sugar

  • 450g bramley apple peeled and chopped


  1. Cook the chopped apples with sugar and a pinch of cinnamon or nutmeg. Then puree.
  2. Arrange the slices of buttered bread around a high-sided souffle dish, slightly overlapping to cover all the inner surface as well as the base.
  3. Pour in the pureed apple, cover the top with more buttered bread (cut to fit where necessary).
  4. Sprinkle a generous amount of demerara sugar over the top. Cook in a hot oven until the bread is pretty much toasted around the edges and the sugar is browned. Serve with single cream.

    This is a quick and easy version of the classic nursery pudding....yum
