  • 300ml milk

  • 4 tbsp sugar

  • 2 tbsp water

  • 2 eggs separated

  • 350g tin of pineapple pieces

  • 50g custard

  • 50g butter


  1. Mix custard powder with part of the milk until smooth. Pour into a saucepan the with the remainder of the milk and pineapple juice. Stir over a low heat until thickened.
  2. Add butter and egg yolks. Continue stirring until smooth and well blended.
  3. Pour over pineapple in an ovenproof dish.
  4. Beat egg whites with 2 tablespoons water until stiff. Beat in 4 tablespoons sugar.
  5. Pile over mixture in dish and bake for 15-20 minutes.

    This recipe might sound a bit weird, but the custard/pineapple combination works really well together and isn't to sweet. Yummy!
