Delicious coconut dhal

  • 1 medium onion sliced

  • 2 tsp curry powder

  • 1 knob ginger grated

  • 200ml coconut cream

  • 1 green chilli finely chopped

  • 175g dried red lentil

  • 2 cloves garlic crushed

  • 400ml light stock

  • 1 handful coriander chopped


  1. Simmer the lentils in the stock for 20 minutes, stirring occasionally.
  2. Meanwhile, fry the sliced onions on a high heat for 10 minutes, until they're beginning to go really brown.
  3. Turn the heat down to medium/low and add the chilli, garlic and ginger and continue to fry gently until the lentils are ready.
  4. Stir the curry powder into the onions and fry gently for 1 minute.
  5. Tip the onions into the lentils and add the coconut cream. Give everything a good stir and add the coriander.

Handy Hint

Yummy with rice or naan bread and a dollop of mango chutney.
If you can't get coconut cream (which comes in cartons), use coconut milk, but watch the quantity as it makes the dhal more liquid.

    I have my sister to thank for this recipe. It's as good as any I've had in an Indian restaurant, and it's cheap and easy. I make it all the time!
