  • 8oz self-raising flour

  • 2 eggs

  • 1oz flaked almonds

  • 5oz light brown soft sugar

  • 3oz sultanas

  • 5oz butter

  • 450g mincemeat


  1. Heat the oven to 325°F/160°C/Gas Mark 3 (fan oven 145°C) and grease and line with greaseproof paper an 8 inch (20cm) round cake tin.
  2. Place all the ingredients, except the almonds, in a large bowl and beat well for 1 minute or until well blended.
  3. Turn into the prepared tin, smooth the top and then sprinkle over the almonds.
  4. Bake in the oven for about 1 ¾ hours (reduce for fan) until the cake is golden brown and shrinking away from the sides of the tin.
  5. Leave to cool in the tin, remove the paper and then store in an airtight tin.

Handy Hint

If you have a fan oven and you find your cake is over-cooking on the top just cover with a bit of greaseproof paper or foil to protect it.
