Pasta with smoked salmon and broccoli

  • 100g smoked salmon chopped

  • 1 tbsp fresh dill chopped finely

  • 320g pasta

  • 320g penne pasta

  • 200g creme fraiche

  • 1 tsp Parmesan grated, to serve

  • 1 pinch fresh basil to serve

  • 1 broccoli cut into florets


  1. Start boiling pasta according to packet instructions.
  2. About 4-5 minutes before the end of the pasta cooking time, bung in the broccoli to the same pan.
  3. Meanwhile, in another (nonstick) large pan, very gently heat about half the tub of creme fraiche and dill.
  4. When pasta and broccoli cooked, drain and add to cream mixture along with smoked salmon and black pepper to taste; mix in and heat through.
  5. If necessary/desired add more crème fraiche.
  6. Serve in warmed bowls, garnished with grated Parmesan and basil.

Handy Hint

Use half-fat creme fraiche to assuage your conscience somewhat
