Sweet potato soup

  • 2 onion

  • 2 stock pots

  • 4 sweet potatoes

  • 10 carrot


  1. Roast sweet potatoes and carrots, once they have softened, add the onion to the roasting tray.
  2. Mix 2x stock pots and mix with boiling water in a pan. Scoop centre from the sweet potatoes and add to the stock.
  3. Also add carrots and onions. Use a hand blender to create a smooth soup. Add tumeric and cumin (to taste).

Handy Hint

Don't let the onions overcook.
