  • 175g self-raising flour

  • 100g icing sugar

  • 3 large egg beaten

  • 1 tsp baking powder

  • 40g desiccated coconut

  • 1 lime finely grated zest and juiced

  • 1 lime zested and juiced - for the icing

  • 250g condensed milk

  • 175g butter softened


  1. Grease and base line a 900g (2lb) loaf tin with baking parchment.
  2. Place all the cake ingredients (apart from the icing sugar and the zest and juice of the second lime) into a large bowl and beat using an electric hand whisk until just smooth and pale.
  3. Pour into the prepared cake tin and bake for 55-65 minutes until a skewer comes out clean when inserted into the middle of the cake.
  4. Make the icing by mixing together the icing sugar and zest and juice of the second lime, and ice when the cake is cool.
