  • 1 tsp bicarbonate of soda

  • 100g caster sugar

  • 3 tbsp golden syrup

  • 1 tbsp Worcestershire sauce or cider vinegar


  1. Mix caster sugar, golden syrup and vinegar together in a large, heavy-bottomed pan over a low heat until the sugar has dissolved.
  2. Stop stirring and bring to the boil. Cook until a tsp of the mixture becomes a hard ball when dropped into cold water (c 150C).
  3. Take saucepan off heat and put the bottom of the pan in cold water in the sink (to stop it cooking further).
  4. Add bicarbonate of soda, take off the heat, and stir. Be prepared - the mixture will bubble and rise rapidly.
  5. Pour bubbling mixture on to a baking tray covered with greaseproof paper or greased foil.
  6. Leave to cool, cut into squares then transfer to an air-tight container.

Handy Hint

Top with melted chocolate for extra-decadent treat. Store in airtight container.
