Shortbread biscuits with cherries and almonds

  • 170g self-raising flour

  • 110g caster sugar

  • 1 handful glace cherries (to decorate)

  • 110g margarine


  1. Mix the flour, margarine and sugar together and then knead.
  2. Shape into balls, about the size of a walnut and place onto a baking sheet, allowing enough room for the biscuits to expand. No need to flatten them.
  3. Put half a cherry or a split almond on each one and bake in the oven for 20 minutes, at 140-150C.

Handy Hint

You can add cocoa powder, almond essence, vanilla essence to these to vary them.

    These are so easy and quick to make. They keep for a day or two in a tin, but are best eaten as fresh and possible. When first taken out of the oven they are soft, but quickly harden as they cool.
