  • 500g caster sugar

  • 280g unsalted butter

  • 125g cocoa powder

  • 1 tsp vanilla

  • 4 eggs

  • 125g plain flour

  • 1 tbsp liquor of your choice (optional)


  1. Preheat the oven to 150C. Butter a 12x8 inch or similar pan and line with parchment paper extending over opposite edges of the pan.
  2. In a large saucepan melt butter over low heat and add sugar and cocoa. Stir over low heat until mixture is hot to the touch and the sugar is mostly dissolved. Remove from the heat and allow to cool for a few minutes.
  3. Add vanilla, alcohol and eggs one at a time, stirring after each addition.
  4. Add flour and stir until well combined.
  5. Spread evenly in the pan and bake for 20-25 minutes. A toothpick placed in the centre of the pan should emerge slightly moist.
  6. Cool and run a knife around the edges. Lift from the pan using the ends of the parchment paper. Cut to the desired size.

Handy Hint

The flavour of these brownies will be most influenced by the type of cocoa and liquor you use. I use Green and Blacks cocoa powder and whisky, but you could use any decent cocoa powder you have.
