Tangy tomato salad

  • 4 tbsp caster sugar

  • 4 tbsp balsamic vinegar

  • 450g cherry tomatoes

  • 1 clove garlic chopped

  • 2 cos lettuce

  • 4 slices bread stale, cut into cubes


  1. Pull pieces of cos lettuce and arrange on a plate.
  2. Slice baby tomatoes in half and top salad leaves with them.
  3. Fry cubes of bread in garlic, a little butter and a glug of olive oil and put on top of salad.
  4. Put vinegar and sugar in a pan and boil until thick, leave to cool slightly and pour over salad.

Handy Hint

If you use the same pan you fried the bread in to warm the vinegar and sugar it picks up the lovely flavours left behind from the bread.
