Speedy  carbonara

  • 8 slices streaky bacon (organic)

  • 250g pasta

  • 1 handful grated Parmesan (to serve)

  • 100g mature cheddar cheese grated

  • 250ml creme fraiche


  1. Bring large pan of water to the boil and cook pasta as directed
  2. Heat oil in non stick frying pan, cut the bacon into small pieces and cook until nicely crispy. Remove from heat
  3. When pasta is cooked, drain, return to pan and immediately add the grated cheddar and half the creme fraiche, stir and mix well
  4. Put the pan on a very low heat, stir until cheese has melted and add the rest of the creme fraiche and the bacon, mix well and serve. (don't keep on the heat for too long). Sprinkle Parmesan. mmmmmmm….

    Agree with the comment below, it is NOT carbonara. Carbonara is absolutely one of the quickest and easiest, not tthe mention tastiest pasta dishes that you can make! Why change something so simple and deliciooous into something that is going to be bland and gloopy? Bland for the creme fraiche, gloopy for using CHEDDAR in a pasta dish. No no no no no.

    Not carbonara, just cheese and bacon pasta, and isn't any quicker than actual carbonara. Carbonara is just as easy and quick, just add couple of whisked eggs and the grated cheese into the hot pasta just off the heat, stir in the bacon and mix it up, the heat of the pasta cooks the egg and cheese in a light sauce. Standard quick meal in our house. If I'm really in a hurry I chuck in chopped up ham instead of cooking bacon. Then it takes less than 10 mins.

    This is a guarateed hit in our house - clean plates every time! It is so quick and far healthier than shop bought cheese sauces.
