Prawn and mango salad

  • 3 tbsp olive oil

  • 1 pinch black pepper

  • 1 tbsp balsamic vinegar

  • 1 lemon juiced

  • 1 handful fresh coriander roughly chopped

  • 16 king prawns cooked and shelled

  • 1 bowl fresh mango chunks

  • 2 bunches rocket salad


  1. Put the rocket and coriander in a bowl and toss together.
  2. Mix the olive oil, lemon juice, and balsamic vinegar together and then add to the rocket and toss well.
  3. Add the prawns and the drained mango piece and toss together gently.
  4. Divide salad between four plates (each person should have four prawns) and grind a little black pepper over each.
  5. Serve with a lemon wedge.
