Enid's amazing chicken nuggets

  • 1 pinch salt and pepper

  • 175g cheddar grated

  • 1 tbsp mayonnaise (to bind)

  • 750g chicken minced

  • 1 eggs beaten

  • 1 clove garlic

  • 175g breadcrumbs

  • 1 bowl fine toast breadcrumbs (to coat the nuggets)


  1. Preheat oven to 180C.
  2. Mix all ingredients up to and including salt and pepper together.
  3. Form into walnut-sized nuggets and roll them in beaten egg and then in toasted breadcrumbs.
  4. You can freeze them now if you want to.
  5. If cooking now, place on greased baking sheet and cook for about 20 minutes (45 minutes if frozen).

Handy Hint

They don't take long to make and you can freeze them. They are delicious too!

    @inlovewithhubby - you can pulse boneless chicken in processor so it will be minced . then add everything else and mix by hand . as there is nothing else to be processed .

    Sorry if being a bit thick...do mean blend when you say mix, as in blend all the ingredients in a food processor, or is the chicken minced already? Admittedly never seen minced chicken so assume the former?
