Pasta sauce (with plenty of  hidden veg)

  • 1 onion

  • 1 tbsp oil

  • 1 tin tomato

  • 1 parsnips peeled

  • 1 sweet pointed red pepper

  • 3 tbsp tomato sauce

  • 1 clove garlic chopped

  • 175g pasta

  • 1 carrot peeled


  1. Chop the pepper, carrot, onion and parsnip.
  2. Put the oil in a saucepan and heat. Add the vegetables.
  3. Crush the garlic and add to the pan.
  4. Put the lid on the pan and cook on a low heat for 10 mins. Stirring occasionally
  5. Add the tomatoes and cook for a further 10 mins. Meanwhile cook the pasta.
  6. Remove sauce from the heat and blend until smooth. Add the tomato sauce.
  7. Drain pasta and sauce to the pan
