  • 6 tbsp ready-made tomato pasta sauce

  • 195g vegetarian mozzarella

  • 6 eggs beaten

  • 150g mushrooms


  1. Fry sliced mushrooms in olive oil for 4 minutes - set aside.
  2. Fry the beaten eggs for a few minutes in olive oil, keep pushing the raw egg into gaps at edges of frying pan.
  3. When one side is golden brown, place the frying pan under your grill until the top looks “set”.
  4. Spoon on tomato sauce, mushroom and cheese and grill for another minute or so, then serve.
