Quick beef and tomato pasta

  • 1/2 tbsp oil

  • 75g cheese grated

  • 400g tin of tomato soup

  • 250g lean minced beef

  • 2 cloves garlic crushed

  • 320g pasta

  • 1 tsp mixed herbs or parsley

  • 1 beef stock cubes crumbled

  • 1 splash Worcester sauce (optional)


  1. Put the oil in a medium saucepan (if you are using a non-stick pan you can omit the oil).
  2. Add the mince, stock cube, garlic, worcester sauce, pepper and saute until the mince has browned.
  3. Drain off the excess fat then add the tomato soup and herbs. Bring to the boil, then cover and simmer for 15-20 minutes stirring occasionally.
  4. Meanwhile cook the pasta according to the instructions on the packet.
  5. Drain the pasta and return to the pan. Pour the sauce over the pasta the sprinkle with 3/4 of the cheese.
  6. Cover and leave to stand until the cheese starts to melt. Stir the melting cheese into the pasta.
  7. Serve in bowls and sprinkle with the remaining cheese and extra black pepper if desired.

Handy Hint

Add mushrooms and/or diced cooked vegetables to the sauce when you add the soup.
Increase or decrease the garlic as you wish.
You can make the sauce in advance and freeze.
Goes lovely with garlic bread.
