  • 1 tbsp olive oil

  • 1 tbsp flour (or breadcrumbs)

  • 1 tbsp parsley chopped

  • 1 pinch nutmeg

  • 230g cheese grated

  • 1 leek or 4 spring onions, finely chopped

  • 1 tsp wholegrain mustard

  • 2 eggs

  • 280g fresh breadcrumbs

  • 1 tbsp chives fresh, chopped

  • 30g butter


  1. Mix together the breadcrumbs, cheese, onion, herbs and seasoning.
  2. Mix 1 whole egg and an egg yolk into the mixture.
  3. Whisk the egg white on a plate until it forms a froth.
  4. Place the flour or breadcrumbs on another plate.
  5. Roll mixture into 12 sausage shapes and roll each sausage in egg white or flour.
  6. Heat the butter and oil in frying pan.
  7. Fry for 15 mins approx, turning frequently until evenly browned.

Handy Hint

Dont have to use eggs but a little milk, if using leeks probably wont need any milk as they are moist. The trick is not to let the mix be too wet or too dry.

    Much nicer than commercially produced vegetarian sausages and much cheaper as using up stale bread
