Cumin spiced cauliflower soup

  • 1 onion chopped

  • 1 tsp ground cumin

  • 1 small cauliflower

  • 570ml marigold veg stock

  • 1 clove garlic chopped


  1. Break the cauliflower into florets and chop the stalk into similar sized pieces.
  2. Place in a roasting tin and sprinkle over the cumin. Season well with salt and pepper and spray with oil.
  3. Roast at 200C for about 20 minutes until lightly charred and tender.
  4. In a pan soften the onion and garlic in some oil. Add the stock and the cauliflower and simmer for 5 minutes.
  5. Blitz with a hand blender until smooth. Season and serve.

Handy Hint

Always check the seasoning in the soup. An extra grind of salt and pepper can lift a drab bowl of soup to a taste sensation.
