  • 1 medium onion chopped

  • 220g mascarpone cheese

  • 2 tsp whole grain mustard

  • 300g chorizo cubed

  • 11oz penne pasta

  • 200g port salut cheese cubed


  1. Cook the pasta according to the instructions on the pack.
  2. Drain the pasta once fully cooked and
    stir in mascarpone and mustard.
  3. Once they have melted stir in the onions.
  4. Keep stirring for 5 minutes then add chorizo and port salut cubes.
  5. Cook for 5 minutes on the hob then transfer into an oven proof dish with lid and cook at 200C for 25 minutes
