  • 1 onion chopped

  • 1 butternut squash cubed

  • 500ml chicken stock hot

  • 2-3 slices streaky bacon or 1 packet of pancetta

  • 1lb sausages

  • 1 splash marsala


  1. Brown sausages all over and transfer to a plate.
  2. Into the same pan fry the chopped onion, butternut squash and the bacon/pancetta add a splash of marsala and fry gently until onion has softened
  3. Return sausages to the pan along with 500ml of hot chick stock and leave to simmer gently for about 1 hour.

Handy Hint

Serve with mashed potatoes and greens of your choice
