Ingredients

1 onion chopped

1 butternut squash cubed

500ml chicken stock hot

2-3 slices streaky bacon or 1 packet of pancetta

1lb sausages

1 splash marsala
Method
- Brown sausages all over and transfer to a plate.
- Into the same pan fry the chopped onion, butternut squash and the bacon/pancetta add a splash of marsala and fry gently until onion has softened
- Return sausages to the pan along with 500ml of hot chick stock and leave to simmer gently for about 1 hour.
Handy Hint
Serve with mashed potatoes and greens of your choice
