Sweet potato, roasted red pepper and chilli soup

  • 1 onion chopped

  • 1 chilli (depends on how spicy you like it)

  • 1 pinch paprika

  • 1 chicken stock cube

  • 1 clove garlic chopped

  • 1 tin plum tomatoes

  • 3 large sweet potatoes chopped


  1. Add onion and garlic to a pan with sweet potatoes and at least 1.5l of water.
  2. Add spices and the tomatoes and cook until the potatoes are soft, about 30-40 minutes on a medium heat.
  3. Whizz with the hand whizzer and add more water if it's too thick.

Handy Hint

Serve with grated cheese and a swirl of cream.
