Spicy pepper soup

  • 1 yellow pepper

  • 750ml vegetable stock

  • 1 large onion

  • 2 red pepper

  • 1 red chilli


  1. Grill the peppers until charred then peel, fry the onion and chilli in a little oil, add peppers and stock.
  2. Simmer for 15 minutes, then blend.

Handy Hint

After grilling, place peppers in a sandwich bag for 5 minutes then remove and the peel comes off more easily.
