Leek and potato soup

  • 1 pinch salt and pepper (to season)

  • 1 tbsp milk (or cream if you want it creamy)

  • 1 large onion

  • 2 large potatoes

  • 1 tbsp butter

  • 3 large leeks

  • 1 pint vegetables or chicken stock


  1. Dice and fry the onion and potatoes in a frying pan using the butter.
  2. Place all the ingredients on a low heat or in a slow cooker until all the ingredients are soft.
  3. Blend for a smooth soup.

Handy Hint

It can be froozen and is great for depression as leek is a winter super food.

    Yum yum, you can't go wrong with leek & potato soup! I don't bother adding onions though as I think the leek bring enough onion-ness to the soup! Fry a little cubed choritzo before adding the other ingredients for a tasty twist!
