Yummy gluten-free bread

  • 1 tbsp oil

  • 2 tsp baking powder levelled

  • 170ml warm water

  • 1 eggs (or egg replacer)

  • 115g gram flour

  • 55g rice flour

  • 55g cornflour


  1. Put all ingredients into a bowl and mix, with mixer or by hand, until smooth.
  2. Place in greased loaf tin and bake at 200C/Gas Mark 6 for 30-35 minutes, or until firm to touch and cooked through.
  3. Remove from tin and allow to cool, but not too much as it's very nice warm with butter!

Handy Hint

I put poppyseeds in mine, just throw them in with all the other ingredients
OR put sesame seeds and sunflower seeds on the top before you put it into the oven!

    Warning: When the OP writes 'cornflour' I think she means 'maize flour' (ie polenta) not 'cornflour' the white starchy stuff. I tried the latter first - yuk. Not bad. Usual issue with gluten-free of mix not binding very well, so the finished product a bit crumbly. I might try this again, altering the proportion of gram flour against the others, as I found the chickpea taste a bit strong. On the plus side the recipe contains no dairy bar the egg, compared with other gluten-free bread recipes which bind with butter, buttermilk, milk etc

    This is the tastiest gluten free bread recipe I have found, my OH even likes it and he can eat any old bread :D
