  • 4 eggs

  • 1 handful mushrooms or whatever filling you like eg bacon, mushroom, cheese, ham, chorizo, vegetables


  1. Heat oven to about 180C.
  2. Fry up whatever fillings you are using.
  3. Divide between a mini-muffin pan.
  4. Beat the eggs with your chosen seasonings.
  5. Pour eggs over the fillings and bake for about 15-20 minutes.
