Blended vegetable soup

  • 1 onion chopped

  • 1 leek chopped

  • 2 sticks celery chopped

  • 1 tbsp bouillon powder

  • 2 medium carrots chopped

  • 2 handfuls split red lentils


  1. In a stockpot, add water between 1/3 and 1/2 full.
  2. Chop all the veg and add to stockpot. Add lentils and bouillon. Sprinkle some white pepper across the top. Mix with a wooden spoon.
  3. Bring to the boil then simmer for 1 hour. Blend.

Handy Hint

Use leftover veg that's almost past it's best, rather than throwing it out. You can also make this in the slow cooker; you need less water and I tend to cook on low for about 8 hours but it would be done before then.
