Easy and impressive tomato tart

  • 1 pinch salt and pepper

  • 10 tomatoes

  • 1 packet of ready made puff pastry

  • 1 handful grated Parmesan or vegetarian alternative

  • 1 handful basil chopped

  • 500ml crème fraîche


  1. Preheat oven to 180°C.
  2. Combine the crème fraîche, Parmesan, basil and seasoning.
  3. Spread thickly onto the puff pastry.
  4. Slice the tomatoes and lay them over-lapping in lines on top of the crème fraîche mixture.
  5. Put onto a baking sheet and put it into the oven for around 30 minutes.
  6. Serve with green salad.

Handy Hint

You can use mascarpone or cream cheese instead of the crème fraîche which makes the tart richer. I've also used creamy goat's cheese which was lovely.
If you cut the pastry into individual rounds it makes a posh looking starter.
