Easy tomato soup

  • 1 tsp olive oil (to drizzle)

  • 500ml vegetable stock

  • 1 tin chopped tomato

  • 1.5 white onion

  • 6 tomatoes

  • 3 cloves garlic


  1. Take an oven tray with raised sides and chop all 6 tomatoes and line them inside it.
  2. Next chop your onions into chunks and pour them over the tomatoes.
  3. Then chop up the cloves of garlic and put over onions and tomatoes.
  4. Finally pour a generous drizzle of olive oil over the mixture and then put in the oven for 20 minutes at 200C/Gas Mark 6 or equivalent.
  5. Give a stir through 10 minutes into cooking.
  6. Once cooked, pour all into a large saucepan. Add the tin of chopped tomatoes and stir. Take a hand blender and blitz to either smooth or chunky consistency.
  7. Make up 500ml of vegetable stock and add until thick or thin enough in consistency. Heat and serve.

    this soup freezes well is good for weaning and is 2 of your fruit and veg portions. roughly 150 calories per bowl. unless you use a huge bowl.
