Pan-roasted potato tart with goat's cheese and red onion

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 red onion sliced

  • 1/2 tbsp fresh thyme

  • 2 slices goat's cheese

  • 450g waxy potatoes peeled and sliced thinly


  1. Preheat oven 200C.
  2. Using an oven-proof frying pan - approx 10 inches across - heat up using a medium heat and drizzle a little of the oil.
  3. Arrange the sliced potatoes thinly so that they cover the bottom of the pan, then season with salt and pepper and turn the heat down.
  4. Cook for about 5 minutes until the potatoes turn golden brown on the edges and translucent in the middle.
  5. Heat a little oil in a large frying pan and carefully fry the onions until they start to soften (which should take about 15 minutes). Add the balsamic vinegar and thyme.
  6. When the onions are ready, add them to the tart and add thin slices of goat's cheese to the top. Bake until the goat's cheese begins to bubble, about 3 minutes, and brown. Drizzle a little olive oil, cut in half and serve.

Handy Hint

If goat's cheese is not to your liking perhaps use bacon or another cheese of your choice.

    Scuppered in the first line of the recipe - I don't have an "oven proof frying pan" !!
