  • 1 chicken carcass left over from Sunday lunch, plus manky bits of skin, leg bones etc

  • 2 sticks celery

  • 1 bay leaves

  • 2 onions

  • 2 carrot

  • 200g noodles (ideally thin rice noodles)

  • 1 handful mushrooms

  • 2 handfuls roast vegetables cooked


  1. Put chicken and chopped veg into large saucepan and cover with water.
  2. Bring to boil and cook at very low heat for hour or so.
  3. Drain to create a clear broth.
  4. Add noodles (we break ours up to make little noodles) and cook for a few minutes as per packet.
  5. If you want, add small flakes of cooked chicken (picked off carcass, or left over from roast).

Handy Hint

Can be made in advance/frozen - just don't put the noodles in until you're ready to serve.
