Omi's beetroot salad

  • 0.5 onion finely sliced

  • 2 tbsp sunflower oil

  • 1 tbsp white wine vinegar

  • 2 packs vacuum packed beetroot (fresh if required)


  1. Warm up the beetroot in a microwave for a minute. Slice them into half-moons to about 5mm.
  2. Place a layer in a bowl, sprinkle with onions and add oil and seasoning. Keep adding layers.
  3. Leave to stand for 20 minutes. The idea is that the seasonings absorb into the warm beetroot and it won't need to be stirred until just before serving.

Handy Hint

Another version is to add a good dollop of sour cream or creme fraiche and mix in - this gives a bright pink creamy sauce which is fun. Don't add so much oil though and don't add the cream until everything has cooled down.
