  • 150ml chicken stock

  • 1 large onion chopped

  • 1 small leek chopped

  • 6 free range chicken legs/thighs

  • 2 medium potatoes sliced thinly

  • 2 carrot roughly chopped

  • 0.5 bottle of white wine

  • 1 red chilli de-seeded and finely chopped

  • 1 bulb fennel chopped

  • 1 bunch thyme twigs tied with string


  1. Layer the potato slices in the bottom of the slow cooker.
  2. Brown chicken in a separate pan, with the garlic and onion.
  3. Add the chicken pieces on top of the layered potatoes and stuff the chilli and thyme in around them.
  4. Mix the rest of the vegetables together then place on top of the chicken.
  5. Drain any excess fat from the pan then de-glaze it with the white wine, scraping up any caramelised chicken from the bottom.
  6. Pour the wine mixture into the slow cooker and top up with the chicken stock
  7. Cook on high for 2 hours, then switch to low for 4 hours, or longer.
