Mushroom and cashew wellington

  • 500g puff pastry ready made, one packet

  • 110g cashew nuts

  • 6 cloves garlic peeled

  • 150g cream

  • 2 handfuls mushroom


  1. Heat the oven to 180C.
  2. Toss the whole garlic cloves into a pan with a splash of oil.
  3. Add mushrooms, cream, cashews and a twist of salt and pepper. Cook on a gentle heat for 15 minutes.
  4. Roll out the puff pastry and spoon the cooked mushrooms in a row in the middle. Seal in the shape of a log and bake for 30 minutes.

    Tried this last night. The only difference was I chopped everything up. It was very nice. DH even had seconds and there is still some leftover. Will be having it again.
