  • 1 olive oil

  • 3 tbsp double cream

  • 1 pinch salt

  • 1 green chilli finely chopped

  • 0.5 tsp garam masala

  • 1 tsp dry roasted cumin

  • 3 cloves garlic finely chopped

  • 100g baby leaf spinach washed

  • 1 pinch brown sugar


  1. Puncture a bag of spinach and put in the microwave for 5 minutes on high. When cooked allow to cool, before squeezing to remove most of the juice. Chop lightly.
  2. Fry the garlic and chilli in olive oil for a few seconds before adding cumin, sugar, salt and cream. Add the spinach, stir, cook for a couple of minutes. Add garam masala, stir, and switch off heat.

Handy Hint

Delicious as a side dish with tandoori chicken and rice.
