Peri peri chicken and pasta salad

  • 2 chicken breast

  • 1 tbsp mayonnaise

  • 1 red onion chopped

  • 1/2 lettuce

  • 2 medium carrots chopped

  • 200g pasta

  • 1-2 tbsp peri peri seasoning


  1. Sprinkle dry peri peri seasoning on the chicken breasts and then grill until cooked through.
  2. While the chicken is cooking, boil the pasta.
  3. Chop up the red onion and carrots in to small pieces.
  4. Once the pasta is cooked, cool in a colander and stir in the mayonnaise.
  5. Chop the peri peri chicken into small chunks and allow to cool before adding to to the pasta.
  6. Finally add the lettuce, carrots, and onion to the pasta and mix well.

Handy Hint

Add new potatoes for a greater combination of textures. They also help to tone down the spice of the peri peri chicken.

    This is quick and easy to make and can be made in advance or rustled up quickly after work. The pasta and chicken can be ate hot or cold to give a change in taste and texture.
