Banana and molasses flapjack

  • 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1 tbsp golden syrup

  • 100g muscovado sugar

  • 350g porridge oats

  • 2 ripe bananas

  • 1 handful sultanas (nuts, seeds, etc, if you like)

  • 150g butter

  • 1 tbsp molasses (or treacle)


  1. Melt butter, sugar, syrup, and molasses in big pan over low heat.
  2. Stir in dry ingredients.
  3. Mash bananas and stir in with any other ingredients you choose.
  4. Bake in greased/lined tray on 180C for 20mins. Cut into pieces while still hot.

    wonderful for bribing tired children to walk home from school or nursery - the sugar and bananas work wonders on the energy front! can be baked on sunday/monday and last all week.
