Spring salmon with seasonal veg

  • 2 splashes balsamic vinegar

  • 0.5 tsp smoked paprika

  • 1 red pepper

  • 0.5 mild chilli powder

  • 2 salmon fillets

  • 8 cherry tomatoes

  • 250g potatoes jersey royal

  • 1 limes

  • 1 bunch asparagus


  1. Cut salmon into bite-size chunks, place in dish and squeeze over the juice of 1 lime. Sprinkle with chilli powder. Set aside.
  2. Slice Jersey Royals, place in an oven-proof dish, sprinkle with smoked paprika and toss in olive oil.
  3. Cook potatoes on gas mark 6 or 200C for approx 20 mins (until potatoes are just starting to brown)
  4. Add asparagus and red pepper, toss together. Cook for a further 15 mins.
  5. Add the salmon and cherry tomatoes, pour in any lime juice leftover from salmon.
  6. Add a few glugs of balsamic vinegar.
  7. Cook for a further 10-15 mins until salmon cooked through.

Handy Hint

Use any fish, I added a tuna steak.

    I make this all the time. It is easy, delicious and healthy too. It looks nothing like the picture attached though. I am quite heavy on the spices and would say it serves 2 rather than 3... But then I am quite greedy!

    Made this last night - it was lovely. Will definitely be making it again. I'm not usually keen on salmon but the chilli and lime really make it tasty. I used courgettes but can see you could use up any veg. I'm always on the lookout for quick easy midweek meals - this is going on my planner!

    This was a tasty dish. I didn't have asparagus so substituted turnips (!) which worked well too. I'm not keen on smoked things and the smoked paprika made me when I prepared it, but the final taste was very mellow.

    Made this several times now. More of a method than a recipe IYKWIM. You could substitute any combination of fish/veg. Recently wrote into my recipe book, which is an honour reserved for really great recipes :-)

    Lovely! Quick and easy, prepared in stages, healthy & delicious. Couldn't find smoked paprika so used ordinary but it didn't matter. Will definitely make it again.

    This is great - quick easy and delicious. Fish hating dd3 sprinkled over soy sauce and loved it, ds2 wasn't keen on the potatoes, but merrily scoffed fish & veg.

    Made this twice, really tasty, like one pot recipes so I don't have to much washing up!
