1 lime

1 pinch sea salt

1 pinch black pepper cracked

500g pollock fillet
Method
- Lightly butter a baking tray, and put the pollock on it.
- Sprinkle with salt and pepper, and grill on a medium heat until the flesh flakes when you poke it at the thickest part.
- Turn onto 2 warmed plates, and cut the lime in half.
- Squirt half the lime onto each portion of fish, poking it so the juice goes in between the flakes.

It's v. nice, Colditz - but why the n/a on success with children - my two hoovered it! long fillets of something akin to pollock made it hard to get the thick bits cooked without overcooking the tails, but that's life
