Lemon and broccoli chicken

  • 350g chicken breast sliced into strips

  • 200ml chicken stock

  • 1/2 lemon zested and juiced

  • 1 tbsp honey or 1 tsp caster sugar

  • 1 tbsp sunflower oil

  • 200g long stem broccoli

  • 2 cloves garlic peeled and sliced

  • 1 tsp cornflour (heaped)

  • 1 handful roasted cashews


  1. Heat the oil and fry the chicken strips for a few minutes.
  2. Remove from the pan and add the garlic and broccoli (or additional seasoning).
  3. Stir-fry for a minute.
  4. Cover and cook until almost tender.
  5. Mix stock, cornflour and honey or sugar to make thick sauce.
  6. Tip the chicken into mixture and heat through.
  7. Add lemon zest and juice, plus cashews, for crunch.
