  • 1 chicken breast per person

  • 1 tbsp coconut cream

  • 1 pinch ground cumin per person

  • 1 handful cashew nuts

  • 1 pinch mild curry powder per person

  • 0.5 banana per person


  1. Make a tinfoil bag for each chicken breast.
  2. Place in the chicken with other ingredients and seal the bag tightly. Bake at 200C for about 20-30 mins depending on size of chicken breast.
  3. Serve with boiled rice and pour over the delicious sauce that is made during cooking in the bag.

Handy Hint

Double up the tin foil so it doesn't tear.
