  • 5 lemon juiced then peeled

  • 8 tbsp muscovado sugar

  • 225g bulb of fresh ginger

  • 2000ml sparkling water


  1. Grate the ginger with the coarse side of a cheese grater.
  2. Put the ginger and pulp into a large bowl with sugar, lemon peel and juice and mash around with a wooden spoon or end of a rolling pin.
  3. Pour in fizzy water and leave in the fridge for around 20 minutes.
  4. Taste to check for bitterness. If it's too bitter, add a little more sugar.
  5. When ready to serve, add ice cubes and pour into a large jug.

Great to make with kids.
