Perfect simple tomato pasta sauce

  • 1 splash olive oil

  • 1 splash balsamic vinegar

  • 1-2 bay leaves

  • 1 clove garlic per person - sliced

  • 1 tin plum tomatoes per person

  • 1 pinch fresh herbs

  • 0.5 tsp brown sugar per person, or equivalent - try maple syrup


  1. Drain the tins of tomatoes in a colander and squish to a satisfying pulp in your (clean) hands. Leave to drain.
  2. Heat oil in a small pan over a low heat for about a minute.
  3. Add garlic and simmer for 30 seconds or so.
  4. Add the drained tomatoes, balsamic vinegar and sugar or maple syrup to taste. Add the seasoning.
  5. Bring to a high heat then turn down as low as possible. Cook with the lid on for 30 minutes at least. It tastes great after about 45. If it's too watery then leave the lid off for 10 minutes - this problem usually results from low grade tomatoes.

Handy Hint

This keeps well in the fridge for about 3 days due to the sugar, just takes a couple of minutes to heat through. Goes great with linguine or tagliatelle, also a fab base sauce for meatballs, chicken etc.

    We make this once a week in one way or another and it's been a classic since I was taught it in Spain a good few years ago - a real family recipe now.
