  • 130g self-raising flour

  • 100g caster sugar

  • 1 large egg

  • 1 tsp baking powder

  • 55g butter

  • 2 browning bananas


  1. Heat the oven Gas 4/180C.
  2. Grease a small loaf tin.
  3. Peel and mash bananas and mix with all other ingredients in a large mixing bowl.
  4. Pour into loaf tin and bake for 35-40 mins.

Handy Hint

You may need to add a drop of milk to achieve a loose dropping consistency depending on how mushy the banana is
