Smoked salmon and pasta

  • 1 onion or a couple of shallot, finely chopped

  • 1 tbsp double cream

  • 100g smoked salmon or smoked trout per person

  • 2 handfuls peas

  • 75g fusilli or penne pasta per person

  • 1 handful broccoli florets


  1. Fry the onion or shallot in some olive oil until soft. Meanwhile cook the pasta according to instructions on packet.
  2. Flake the smoked fish with a fork until it's in lots of little pieces, and remove any bones that might have sneaked in.
  3. Meanwhile, boil the broccoli, peas and any other green veg you're using.
  4. Add the cream to the pan with the onion and allow to bubble so that the cream thickens. Then add the smoked fish.
  5. Combine this sauce with the pasta and green veg and mix it all up. Serve.

Handy Hint

Add any vegetables you like, the sort of things that work in a stir fry work well in this recipe. We always add peas as they're popular in our house, they're good for you and it's easy to keep a bag in the freezer for emergencies!

    We used salmon and it was lovely, my dd's loved it even though they insisted before eating it they wouldn't.

    Absolutely lovely. Very quick and easy to make and tasted fab. An easy Monday night dinner.

    Even my fussy 2 year old (and even fussier husband) wolf this one down and it's pretty healthy with oily fish and lots of veg. Little ones can help with flaking the fish - my DD loves doing this - and it's fast enough to make that even impatient toddlers can normally wait long enough.
