Salmon and couscous en papillote

  • 1 tsp olive oil

  • 1 salmon fillet (per person)

  • 50g couscous (per person)

  • 1 handful vegetables (of your choice)


  1. Pre-heat the oven to 180C.
  2. Make up the couscous with hot vegetable stock or water and set aside to cook. (50g of couscous will need about 100ml of hot but not quite boiling water/stock, cover with cling film and leave until liquid is absorbed).
  3. Prepare the vegetables. They should be chopped into small enough pieces to oven cook in 20 minutes. Small broccoli florets work well, as do frozen peas or sweetcorn. Carrot may need a little pre-cooking. Choose your family's favourites.
  4. Once ready, drizzle the couscous with a little olive oil and fluff up with a fork.
  5. Pile couscous onto the center of a 30cm length of greaseproof paper, top with your chosen veg and finally the salmon.
  6. Bring the two long edges of the paper together and roll together to join. Twist the open ends and tuck under the parcel to completely seal the fish inside.
  7. Place on a baking tray and put in the oven for 20 minutes.

Handy Hint

The parcel can be placed on a plate and served from the paper. This a) makes the dish more exiting for children and b) saves on washing up :)
I like to spread a little garlic on my salmon fillet before baking and season with soy sauce once it's cooked for an interesting flavour.
I used to make this while DS napped and then put in the fridge till dinner time. Now he's bigger, he likes to help me stir the couscous and pile the ingredients on the paper.

You can substitute chicken for fish if you like.
